Spring & Summer
As soon as the spring sun coaxes new growth, South Tyrolean plates come alive with fresh, vibrant flavours. During spring and summer, we enjoy light dishes with seasonal vegetables, herbs, and Italian classics. The Bassa Atesina region is particularly famed for its exceptional asparagus, often served with new potatoes, cooked ham, and a traditional Bolzano sauce.
Autumn & Winter
When the days grow cooler—or year-round in mountain huts—we turn to heartier fare. Classic dishes like Knödel, Goulash, and Schlutzkrapfen (stuffed pasta) share the table with desserts such as apple strudel, Strauben, and Krapfen.
